3x 12cm pita’s
425g canned black beans, rinsed and drained
½ cup fresh cilantro, chopped and divided
2 tbsp tahini
2 tbsp water
2 tbsp fresh lime juice
1 tbsp extra-virgin olive oil
¼ tsp ground cumin
¼ tsp salt
1 garlic clove, peeled
½ small jalapeño pepper, seeded
1) Preheat oven to 220°C.
2) Place a quarter cup cilantro, tahini, water, lime juice, olive oil, cumin, salt and garlic in a food processor; process until smooth.
3) Spoon the mix into a bowl and sprinkle with remaining quarter cup cilantro.
3) Cut each pita into 8 wedges and arrange on a baking sheet.
4) Bake for 6 minutes, turning once.
5) Serve with hummus mix.
