1 chopped large onion
2 cloves of chopped garlic
453 grams spinach, fresh or frozen, defrosted
425grams of diced tomatoes with oregano and basil
453 grams pack of orzo pasta
1.5 litres of chicken or vegetable stock
1.5 litres of water
1) Preheat a large soup and drizzle it with olive oil.
2) Add onions and garlic and sauté until tender for about 3 minutes.
3) Add tomatoes, spinach, chicken or vegetable stock and water. Bring to a boil and reduce heat to medium.
4) Add orzo pasta and cook until tender for 15 minutes.
