1 1/2 cups sifted all-purpose flour
1 1/4 cups mashed cooked sweet potatoes
3 1/2 teaspoons baking powder
2 eggs, beaten
1 1/2 cups milk
1/4 cup butter, melted
1 teaspoon salt
1/2 teaspoon ground nutmeg
1) Sift all your dry ingredients into a mixing bowl.
2) Combine remaining ingredients and stir until the dry ingredients are moistened.
3) Drop the dough unto a hot greased pan using tablespoons.
4) Fry the dough, turning once, until browned on both sides.
Makes about 24 pancakes.
