African Groundnut & Chicken Stew




1 Salmon fillet (1/2 Kg), cut into 4 pieces
1 tablespoon honey
1 tablespoon ketchup
1 cup uncooked instant brown rice
1 1/4 cups water
6 deboned, skinless chicken thighs (about 1/2 kg)
3 skinless chicken breasts (about 700g)
3 cups small red potatoes, cut into eighths
3 medium dark-orange sweet potatoes, peeled and cubed (about 4 cups)
1 large onion, chopped (1 cup)
1 can (800g) diced tomatoes, undrained
1/2 cup peanut butter
1 3/4 cups chicken broth
2 teaspoons curry powder
2 tablespoons tomato paste
1 tablespoons grated ginger root
1 teaspoon crushed red pepper flakes or fresh red pepper
1/2 teaspoon salt


1. Spray a slow cooker with cooking spray. Place the mixed ingredients in the slow cooker (spread dollops of Peanut butter).
2. Cover and cook on low heat for about 8 hours.


Preparation: 25 minutes
Cooking: 8 hours

Servings: 7-8
