Avocado, Bean and Corn Salsa


400g canned black beans, drained and rinsed
1 ripe avocado, halved, pitted, peeled and diced
1 cup frozen corn, thawed
1 ripe tomato, sliced
¼ cup store-bought vinaigrette
¼ cup green onions, thinly sliced
¼ cup red bell pepper, diced
2 tbsp parsley, chopped
1 tsp lime peel, grated
¼ tsp salt

1) Whisk together the salad dressing, green onions, parsley, lime peel, and salt.
2) Add the tomato, beans, corn and red pepper.
3) Toss well to coat.
4) Add avocados and toss gently.
