Bacon-Roasted Chicken with Potatoes


700g baby potatoes
6 chicken thighs
6 chicken drumsticks
12 slices centre-cut bacon
1 onion, coarsely chopped
1 tsp dried basil
1 ½ tsp garlic powder
1 tsp adobo seasoning
1 tsp ground black pepper
1 tsp salt, or to taste
¼ tsp dried chives

1) Preheat oven to 200 °C.
2) Wrap each chicken piece in a slice of bacon, trying to cover as much of the chicken as possible.
3) Place the wrapped chicken pieces in a baking dish, season with salt and pepper, and sprinkle onion over the chicken.
4) Push potatoes down into the spaces between the chicken pieces and around the edge of the dish.
5) Combine the chives, basil, garlic powder, adobo seasoning, and black pepper in a small bowl, and sprinkle the seasoning to taste over the chicken and potatoes.
6) Bake in preheated oven for an hour, until the bacon is crisp and brown and the potatoes are tender.
7) Serve hot.
