Baked Dijon Salmon


450g salmon
55g butter, melted
45ml Dijon mustard
20ml honey
25g dry bread crumbs
25g pecans, finely chopped
5g fresh parsley, chopped
salt and pepper
1 lemon, sliced in wedges

1) Preheat oven to 200 °C.
2) Stir together butter, mustard, and honey in a small bowl and set aside.
3) In another bowl, mix together pecans, bread crumbs, and parsley.
4) Lightly brush each salmon fillet with honey mustard mixture.
5) Sprinkle the tops of the fillets with the bread crumb mixture.
6) Bake fish for 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork.
7) Season to taste with salt and pepper, and garnish with a wedge of lemon.
