Beef Wraps

 


Ingredients
350g lean minced beef
400g canned kidney beans, drained and rinsed
4 whole wheat wraps
1 onion, peeled and diced
1 green bell pepper, cored seeded and diced
¾ cup tomato purée
2 tablespoons cider vinegar
1 ½ tbsp light brown sugar
1 tbsp honey
2 tsp Dijon mustard
½ tsp chilli powder
freshly ground pepper, to taste

Instructions
1) Place a large sauté pan over a medium heat and crumble in the beef.
2) Fry until the meat starts to brown, then add the bell pepper and onion.
3) Stir occasionally, until the veggies start to soften – this should take around 5 to 10 minutes.
4) Once vegetables are tender, add the tomato purée and stir into the meat.
5) Add the vinegar, brown sugar, honey, mustard and chilli powder and stir well.
6) Add the beans and season with salt and pepper.
7) Bring to a boil and cook until the sauce is nice and thick.
8) Place the mix onto the middle of a wrap, top with lettuce and roll up the wrap.
