Breakfast Pizza


2 tablespoons shredded Italian cheese blend
2 slices pepperoni
2 tablespoons prepared marinara sauce
1 large egg, beaten
1 whole-wheat English muffin, split and toasted

1) Preheat oven or toaster.
2) Coat a small non-stick skillet with cooking spray and heat over medium to high heat.
3) Add egg and cook, stirring often until set into soft curds for 2 minutes.
4) Spread marinara sauce on English muffin halves. Top with scrambled egg, cheese and pepperoni. Leave in oven until cheese is melted. This should take 2 minutes.
