2l vanilla ice cream, softened
250g maraschino cherries, drained and chopped
½ cup pecans, coarsely chopped
1 cup dark chocolate chips
chocolate liquer (optional)
chocolate sauce (optional)
whipped cream (optional)
1) In a suitably large bowl, mix together the softened ice cream, cherries, pecans, and chocolate chips until well mixed.
2) Spoon into a 20cm springform pan, cover, and freeze until firm.
3) When ready to serve, unmold and slice.
4) Serve topped with your choice of chocolate liqueur, a dollop of whipped cream, chocolate sauce, or additional chopped pecans.
