Chicken And Avo Melt

 

Ingredients
4 slices wholegrain or rye bread
2 chicken breasts, cooked and cubed
4 slices cheddar or mozzarella cheese
60ml cream cheese
1 red bell pepper, sliced
2 small avocados, sliced
1 garlic clove, peeled

Instructions

1) Place the bread under a heated grill until golden brown.
2) Rub the clove of garlic over each toasted slice for flavour.
3) Spread cream cheese generously.
4) Top each slice with chicken, pepper and avocado, finishing with a slice of cheese.
5) Return to the grill until cheese is melted to your satisfaction.
