Chicken and Savoury Rice Casserole

 

Ingredients
350g savoury rice
4 chicken thighs
4 drumsticks
1 onion, chopped
1 red pepper, chopped
6-8 pitted olives
2 garlic cloves, chopped
50g frozen green beans, defrosted and chopped
olive oil for frying

Instructions
1) Preheat the oven to 190 °C.
2) Heat the oil in a frying pan.
3) Fry the onion, pepper and garlic until tender. Stir in the green beans, then put them into the bottom of an ovenproof dish or roasting pan.
4) In the same pan, fry the chicken pieces with the thighs skin-side down. Fry until brown, then turn over.
5) While the chicken is cooking, pour the rice over the vegetables and stir, then add olives. Pour water over the rice to cover well.
6) Arrange the chicken in the rice. Cover with foil and cook for 20 minutes in the preheated oven.
7) After 10 minutes, check to see whether the rice needs a little more boiling water and top up if necessary.
8) Ensure the chicken is well cooked before serving.
