Chicken Cutlets

 

Ingredients
500g boneless chicken breasts
1 cup bread crumbs
1 egg, well beaten
¼ cup vegetable oil
2 cm chunk ginger, grated
3 cloves garlic, crushed
3 green onions, chopped
2 tomatoes, chopped
1 tsp cumin powder
1 tsp garam masala
¼ tsp red chili powder
bunch of coriander leaves, chopped
salt to taste

Instructions
1) Mince the chicken finely and place into a bowl.
2) Add egg, chopped green onions, tomatoes, ginger, garlic, garam masala, coriander, cumin, chili powder, salt and half the cup of breadcrumbs.
3) Mix well.
4) Divide lemon-sized balls and flatten them to make thick patties.
5) Coat the chicken patties in the remaining breadcrumbs.
6) Heat the oil in a frying pan or skillet and fry the chicken cutlets until all sides are golden brown.
