1kg pork ribs (have your butcher cut them up if you are unable)
4 tbsps hoisin sauce
3 tbsps honey
3 tbsps water
3 tbsps rice wine
2 tbsps soy sauce
2 garlic cloves, chopped
1) Steam the ribs for 20 minutes – this will decrease the cooking time substantially. If you cannot steam them, put them straight into the marinade (see below)
2) Combine all the other ingredients in a bowl.
3) Cool the ribs for 10 minutes after steaming, then place them in the marinade and leave for an hour in a refrigerator.
4) Place the ribs in a roasting pan with all of the marinade, cover with foil and cook for 30 minutes (1 and a quarter hours if unsteamed) at 190 °C.
5) Serve immediately.
