Choc-Chip Cookie Dough Cheesecake


1 ½ cups chocolate wafer biscuits, finely crushed
450g cream cheese
3 eggs
1 ¼ cups + 2 tsp castor sugar
1 cup chocolate chips
2 cups sour cream
½ cup all-purpose flour
¼ cup melted butter
¼ cup butter
¼ cup packed brown sugar
2 tbsp water
3 tsp vanilla extract

1) Preheat oven to 175 °C.
2) Mix the chocolate wafer crumbs with 2 tablespoons of the castor sugar, and the melted butter.
3) Press firmly into the bottom and 1cm up the sides of a 20cm springform pan.
4) Bake at 175 °C for about 8 minutes.

5) Beat a quarter cup butter with the brown sugar and quarter cup of castor sugar in a bowl.
6) Stir in the water and a teaspoon of the vanilla extract.
7) Beat in the flour and the chocolate chips. Stir well until combined.
8) In a food processor or with a handmixer, beat the cup of castor sugar and all the cream cheese until well mixed.
9) Add 1 cup of the sour cream, the eggs, and 1 teaspoon of the vanilla.
10) Mix well and pour onto prepared crust.
11) Drop the cookie dough portions evenly over the top of the cake, pushing the dough beneath the surface.
12) Bake at 175 °C for about 40 minutes. The cake should be slightly jiggly in the middle afterwards.
13) Mix the remaining cup sour cream, 1 teaspoon vanilla extract and the 2 teaspoons of castor sugar until smooth.
14) Spread over cake after baking.
13) Allow cake to cool, then chill in refrigerator until cold, at least 4 hours.
