Cold French Potato Soup

500g thinly sliced leeks (white part only)
6 medium potatoes (thinly sliced)
1 large onion
60g butter
300ml chicken broth
200ml light cream
200ml milk
150ml whipping cream
some chives (thinly sliced)
some salt to taste


1) Cook leeks and onion in butter until tender, but make sure that they do not turn brown.
2) Add potatoes, broth and season with salt to taste.
3) Cook covered 35 to 40 minutes and then rub through a fine sieve.
4) Return to heat, add milk and light cream. Bring to a boil and then cool.
5) Again rub through a fine sieve and allow to cool.
6) Once completely cold add whipping cream.
7) Chill before serving and garnish with snipped chives.
