Corn And Black Bean Salad

 

Ingredients
425g can black beans, rinsed and drained
225g can sweet corn, drained
½ red onion, chopped
¼ cup balsamic vinegar
3 tbsp fresh cilantro, chopped
2 tbsp vegetable oil
½ tsp salt
½ tsp white sugar
½ tsp ground black pepper
½ tsp ground cumin
½ tsp chilli powder

Instructions
1) In a small bowl, mix together the oil, balsamic vinegar, salt, sugar, black pepper, cumin, and chilli powder.
2) In a medium bowl, stir together onion, black beans and corn.
3) Toss beans and corn with vinegar and oil dressing.
4) Garnish with cilantro.
5) Cover and refrigerate overnight.
