Creamy Potato Salad


1 ½ kg potatoes, peeled and diced
½ cup onion, chopped
½ cup green onion, chopped
½ cup mayonnaise
½ cup sour cream
¼ cup heavy cream
â…“ cup cider vinegar
3 hard-boiled eggs, peeled and chopped
2 tsp white sugar
1 ½ tsp dry mustard
1 ½ tsp salt
¾ tsp ground black pepper

1) Bring a large pot of salted water to a boil.
2) Add the potatoes and cook until tender.
3) While cooking the potatoes,whisk together the sugar, mustard, vinegar, salt and pepper in a large bowl.
4) Drain the potatoes, stir them into the vinegar mixture and let marinate for 30 minutes.
5) In a small bowl, whisk the mayonnaise, heavy cream and sour cream.
6) Fold this mixture into the potato mixture along with the onions and hard-cooked eggs.
7) Cover and chill before serving, or serve straight away.
