Crustless Spinach Quiche

1 300g pack frozen chopped spinach, thawed
400g feta cheese
2 cups shredded cheddar cheese
2-3 green onions, finely chopped
4 eggs, beaten
¼ cup bread crumbs
1 clove garlic, finely chopped
¼ cup pecorino cheese
½ tsp thyme
½ tsp oregano
1) Preheat oven to 165 °C. Lightly grease a (~20cm) pie or quiche pan.
2) Place the spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft.
3) Drain off any remaining liquid. Stir in green onions, eggs, feta, cheddar, garlic, oregano and thyme.
4) Pour mixture into prepared pan.
5) Bake uncovered in preheated oven for 45 minutes.
6) Remove from oven and sprinkle with bread crumbs and pecorino.
7) Return to oven and bake for an additional 15 minutes, until eggs are set.
