Deli Potato Salad

 

Ingredients
1 ½-3kg potatoes, boiled, cooled and cut in chunks
3 hard boiled eggs, chopped
200g salami, ham, or preferred deli meat, cut in chunks
2 apples, cored and chopped
3 dill pickles, chopped
1 onion, chopped
3 tbsp mayonnaise
3 tbsp red wine vinegar
salt and fresh ground pepper to taste
dash of paprika

Instructions
1) Mix the potatoes, pickles, eggs, apple and onion in a large bowl.
2) Fry the deli meat lightly and drain off excess fat.
3) Allow meat to cool.
4) Stir meat, mayonnaise and seasoning into potato mixture.
5) Chill for 2 hours before serving.
