Green Mango Achar


1kg green mangoes
250ml sunflower oil
180ml white vinegar
45g achar masala
6 green chillies, crushed
6 red chillies, crushed
20g garlic, crushed
1 tsp salt
1 tsp mustard powder

1) Wash the mangoes well.
2) Cut into 2cm chunks, leaving the skin on.
3) Add all other ingredients and mix well.
4) Place in a large container, cover and leave for 3 days, tossing and stirring often.
5) To use at a later date, spoon the achar into sterilized jars, leaving about 1.5cm gap at the top. Seal tightly and store.
