Grilled Chicken and Pineapple Kebabs


4 chicken breast fillets, sliced into thick strips
1 peeled pineapple, sliced into chunks
15ml honey
1 finely chopped garlic clove
Zest of 1 lemon
A handful of coriander leaves to serve
Avocado oil
Pineapple salsa

1) Thread the chicken and pineapple into skewers.
2) Combine the honey, garlic, lemon and olive oil and pour over the kebabs. Marinate for 1 hour.
3) Fry the chicken skewers until golden, turning regularly, and then cover with a lid to continue cooking for at least 5 minutes.
4) Serve with pineapple salsa and fresh coriander.
