Hearty Beef Stew




1/2 Kg beef stew meat, cut into 2.5cm pieces
1 can diced tomatoes, undrained
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons vegetable oil
1 small chopped onion
2 carrots, peeled & thickly sliced
2 stalks thickly sliced celery
2 cloves finely chopped garlic
1 cup water
2 beef flavour bouillon cubes
1 teaspoon fresh thyme leaves or 1/4 teaspoon ground thyme
1 large potato, peeled & cut into 2.5cm pieces



1. Mix the flour, salt and pepper in a medium bowl. Add beef, toss well to coat.
2. Heat oil in large saucepan over medium-high heat. Add beef, onion, celery and garlic. Cook, stirring frequently, for 6 to 8 minutes or until beef is no longer pink and vegetables are tender.
3. Add tomatoes with juice, water, carrots, bouillon and thyme. Bring to a boil. Reduce heat to low, cover.
4. Cook, stirring occasionally, for 25 minutes. Add potato and cover. Cook, stirring occasionally, for an additional 25 to 30 minutes or until beef is tender.
