Italian Green Bean Salad

 

Ingredients
2 cups fresh or frozen green beans
1 cup cherry tomatoes, halved
1 cup green or black olives
½ cup Parmesan cheese
1 small onion, chopped
6 tablespoons olive oil
2 tablespoons wine vinegar
1 teaspoon Dijon mustard
1 teaspoon salt
¼ teaspoon pepper
2 canned anchovies, chopped
some lettuce (optional for serving)

Instructions
1) Cook beans until al dente.
2) Drain and cool.
3) Add onions and toss to mix.
4) Add remaining ingredients in a small bowl to make the dressing.
5) Pour the dressing over beans, add Parmesan cheese and toss to mix well.
6) Arrange on a bed of lettuce and add tomatoes, olives and anchovies.
