Lamb Seekh Kababs

 

Ingredients
450g lean minced lamb
1 tsp meat tenderizer
1 red onion, finely chopped
2 green chilies, chopped
2 tbsp plain yoghurt
1 tsp fresh gingerroot, finely chopped
2 garlic cloves, crushed
1 tsp ground coriander
1 tsp cumin
1 tsp salt
1 tsp chili powder
1 tsp garam masala
1 lemon, cut into wedges
bunch of cilantro, chopped fine

Instructions
1) Place the lamb in a bowl, then add the meat tenderizer and mix in well. Reserve for 3 hours.
2) Preheat the broiler to medium.
3) Mix the onion, green chilies, and cilantro together in the bowl.
4) Mix the yoghurt, ginger, garlic, ground cumin and coriander, salt and chili powder, garam masala in separate bowl.
5) Blend with the onion mixture.
6) Add the combined mixture to the lamb and mix together.
7) Divide the mixture into 10-12 equal portions.
8) Roll 2 portions around each metal skewer with your fingers, pressing all around.
9) Broil the kebabs under the hot broiler for 8-10 minutes, turning and basting occasionally with oil.
10) Serve with lemon wedges. The cooked meat can also be chopped into a salad.
