Marinated Grilled Shrimp

Ingredients
910g fresh shrimp, peeled and de-veined
3 cloves garlic, minced
80ml olive oil
60ml tomato sauce
30ml red wine vinegar
5g fresh basil, chopped
1 tsp salt
pinch of cayenne pepper

Instructions
1) In a suitably large bowl, stir together the olive oil, tomato sauce, garlic, and red wine vinegar.
2) Season with salt, basil and cayenne pepper.
3) Add the shrimp to the bowl and stir until evenly coated.
4) Cover and refrigerate for a half to one hour, stirring once or twice.
5) Preheat grill for medium heat.
6) Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
7) Lightly oil the grill grate.
8) Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.
