Mashed Potato Bake


4 large white potatoes, peeled, chopped and cooked
4 large sweet potatoes, peeled, chopped and cooked
250g chive cream cheese, divided
115g sour cream, divided
60g Parmesan cheese, shredded finely
60g cheddar cheese, shredded and divided
1 tsp salt
½ tsp black pepper

1) Heat oven to 190 °C.
2) Place white and sweet potatoes in separate bowls.
3) Add half of the cream cheese and half the sour cream to the potatoes in each bowl.
4) Season with salt and pepper.
5) Mash with potato masher or fork until creamy.
6) Stir half of the Parmesan cheese into bowl of white potatoes.
7) Stir half of the cheddar cheese into bowl of sweet potatoes.
8) Alternately layer half each of the white potato mixture and sweet potato mixture in a suitable casserole dish.
9) Repeat layers until all potato is used.
10) Bake for 15 minutes.
11) sprinkle with remaining cheese, continue baking 5 minutes or until cheese has melted.
