Mini Veggie Burgers (for toddler)

Ingredients

400g canned red lentils
400g canned chickpeas
2 medium  baby marrows, grated
1 cup oats
2 medium onions, chopped
2 medium carrots, grated
1 cup stale breadcrumbs
1 egg
2 tbsp lemon juice
2 tbsp coriander, chopped
2 tsp garlic, crushed
1 tsp salt
1 tsp olive oil
vegetable seasoning (MSG-free)
plain flour (for dusting)
egg (for coating)

Instructions
1) Fry the onions with the garlic and some seasoning to taste until golden brown.
2) Place the chickpeas and half the lentils in a large bowl, with the egg, coriander, carrots, marrow and cooked onions.
3) Blend in a food processor until chickpeas are broken.
4) Add remaining lentils, the oats and the breadcrumbs (if the mixture is too moist, you can add more oats).
5) Mix thoroughly.
6) Shape into small portions (junior can help).
7) Coat in egg, and then dip in breadcrumbs.
8) Fry until golden brown.
9) Serve on a roll or in mini-pitas.
