Minted Watermelon Salad

 

Ingredients
1 medium watermelon
1 Red onion
A handful of fresh mint leaves
Salt and black pepper to taste

Instructions

1) Cut up a quarter of a medium watermelon and arrange on a plate.
2) Sprinkle with ¼ thinly sliced red onion, ½ cup torn fresh mint leaves, and ¼ teaspoon each kosher salt and black pepper on your watermelon.
