Oat Muffins

 

Ingredients
2 cups oatmeal
1 ½ cups buttermilk
1 ¼ cups all-purpose flour
1/3 cup vegetable oil
¼ cup syrup (maple or golden)
2 large eggs
¼ cup packed light brown sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt

Instructions
1) Grease and flour 12 standard muffin cups.
2) Combine the oatmeal, buttermilk, and raisins in a large bowl; let stand 10 minutes.
3) Whisk in the oil, syrup, egg, and brown sugar.
4) Sift the dry ingredients over the mixture and gently stir until combined.
5) Divide the batter evenly among the prepared muffin cups.
6) Bake at 220 °C for 18 to 20 minutes
