250g chicken livers, cleaned and halved
1 large onion, chopped
30ml vegetable oil
½ tsp cayenne pepper/peri-peri powder
salt and pepper
1) SautÃ© the onion in oil until glassy, then add the pepper powder.
2) Add the chicken livers and stir-fry over high heat until just cooked.
3) Season with salt and pepper.
4) Add the brandy to deglaze the pan.
