Quick Carbonara Pasta


375g spaghetti pasta
200g shortcut bacon rashers, cut into 2cm-long pieces
2 eggs
2 egg yolks
½ cup pure cream
â…” cup parmesan cheese, finely grated
1 tbsp olive oil
fresh flat-leaf parsley leaves, to serve
salt and black pepper to taste

1) Cook the pasta according to packet directions, until tender.
2) Drain and return to pan.
3) While cooking pasta, heat oil in a frying pan over medium-high heat.
4) Add bacon.
5) Cook for 4 minutes or until crisp.
6) Whisk the egg yolks, eggs, cream and parmesan in a jug.
7) Season with salt and pepper.
8) Add bacon and egg mixture to pasta.
9) Cook while tossing, over low heat, for 1 minute or until combined.
10) Top with parsley and serve.
