Simple Black Bean Salad

1 400g can black beans
1 small onion, chopped
1 clove garlic, minced
1 tbsp chopped fresh cilantro
¼ tsp cayenne pepper
salt to taste
1) Combine beans, onion, and garlic in a saucepan and bring to a boil.
2) Reduce heat to medium-low and add the cilantro, cayenne, and salt.
3) Simmer for 5 minutes, and serve.
Serves: 2-4
Canned corn, a chopped tomato or red pepper can be added for variety.
