Smoked Salmon Salad

 

Ingredients

350g pasta, penne or macaroni
250g smoked salmon, cut in small stripes
3 tbsp mayonnaise
2 tbsp olive oil
1 clove galic, minced
1 small carrot, shredded
15 black olives, cut in halves
4 tbsp milk
1/4 tsp paprika
1/4 tsp dried basil
1/4 tsp dried oregano
a dash of dried rosemary
a dash of dried thyme
salt and pepper to taste
 
Instructions
1) Cook pasta according to package directions. Drain and rinse until the pasta is cold to the touch.
2) While the pasta is cooking, take the dried herbs and rub them between your hands into a small bowl and add the milk, stir and let soak.
3) Put the cold pasta in a large bowl; add the sliced salmon, garlic, carrots and olives.
4) Mix the mayonnaise, paprika and oil in a separate bowl until smooth, add the herb-milk mixture.
5) Add salt and pepper to taste; pour the dressing over the pasta, stir.
6) Place in the fridge for at least 1 hour.
7) Before serving add salt, pepper and/or milk if necessary. Salad should not have a dry appearance.

For variety and when in season, tomatoes, cucumbers, radishes, or sweet peas may be added to the salad.
