1 180g can tuna chunks (oil or brine)
2 Ciabatta loaves
125g thinly sliced mozzarella
25g softened butter
4 roughly chopped sun-dried tomatoes
6 sliced black olives
2 chopped spring onions
2 tbsp mayonnaise
Crisps and salad to serve
1) Halve the Ciabatta loaves by slicing through the middle.
2) Mix the drained tuna with the mayonnaise. Season.
3) Preheat the grill and toast the cut sides of the Ciabatta. Cover the bottom pieces of Ciabatta with slices of mozzarella and place under the grill until melted and bubbling.
4) Spread the top pieces of Ciabatta with butter. Scatter the sun-dried tomatoes and olives onto the cheese and then top with the tuna mixture and spring onions. Cover with the top pieces of Ciabatta.
