Vanilla Fudge Muffins


300g self-raising flour
115g castor sugar
125ml milk
100ml crème fraiche
100g fudge, chopped
60g butter, melted
1 egg, beaten
1 tsp baking powder
1 tsp vanilla essence

1) Preheat oven to 200 °C.
2) Sift flour, baking powder and sugar into a large bowl, scatter the fudge on top.
3) In a separate bowl (or jug), lightly beat the milk, crème fraiche, egg and vanilla until smooth.
4) Stir in the butter.
5) Pour the milk mixture into the dry ingredients and mix until just combined.
6) Spoon into a greased muffin tray.
7) Bake for 20 minutes or until risen and golden.
8) Allow to cool in the pan a few minutes before transferring to wire rack to cool.
