Vegetable Pasta

 

Ingredients
400g pasta
125ml dry white wine
50g mushrooms, sliced
1 zucchini, cut in baton-type strips
1 red onion, finely chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
12 pitted black or green olives, halved or chopped
20g butter
3 tbsp sun-dried tomato purée
1 tbsp olive oil
2 garlic cloves, chopped
½ tsp dried thyme
½ tsp dried oregano
salt and pepper to taste

Instructions
1) Melt the butter in a saucepan over a low heat.
2) Add the oil, then sweat all the vegetables together, stirring for the first minute.
3) Cover and leave on a very low heat for 10 minutes.
4) Stir in the tomato purée and garlic, cover again and leave for 5 more minutes.
5) Add the white wine and turn up the heat to a simmer.
6) Stir in the herbs and olives.
7) Season to taste, then cover and cook gently for 10 minutes.
8) Cook the pasta of your choice either according to the packet directions.
9) Serve the sauce with the pasta.
